ROASTED CAULIFLOWER with THAI BASIL CHIMICHURRI

Ingredients

1 head cauliflower, cuts in small florets

2 tbs olive oil, extra virgin

Salt, to taste

Pepper, to taste

1/2 cup garlic cloves

1/2 cup Thai Basil Chimichurri (recipe below)

Thai Basil Chimichurri

1/4 cup each red wine vinegar

2 cloves garlic minced

1/4 cup onion, minced

1/2 cup thai basil

1/4 cup fresh cilantro

1/2 cup olive oil

1 teaspoon salt

Instructions

Roasted Cauliflower

  1. Preheat Napoli oven on low heat for 20 minutes. 
  2. In medium-sized baking pan, combine cauliflower, oil, salt and black pepper. Roast for 30 minutes or until cauliflower is golden brown and soft.
  3. Arrange cauliflower on a platter and drizzle the Thai Basil Chimichurri on top. Serve while warm.

 

Thai Basil Chimichurri

  1. Pulse all ingredients in a food processor until chunky. Reserve until needed.
